Golden Bowls

I have a favorite restaurant in Athens, Ga and it’s called The Grit. If you know the Grit, I know you love the Grit because why wouldn’t you. It’s a vegetarian joint and it is goooooooooooooooooooood food. Many Athens transplants I know have the cookbook, same as me. One of their signature dishes is the Golden Bowl – Tofu on brown rice and topped with Cheese if you want. And I want.

I grew up eating tofu on account of my mom being asian and stuff. I don’t mean to be all “I was eating tofu before tofu was cool” but, you know… We ate a lot of things that the white people didn’t quite catch onto until later, but I’m glad it did catch on so I don’t have to fight with the Koreans at the farmers market to get the last box of tofu. Anyways, here’s the basic recipe:

Tofu

Soy Sauce (about 2 Tbsp)

Nutritional Yeast ( 2 generous Pinches)

Brown Rice

Mozzarella Cheese

You cube the tofu (I go smaller for optimum yeast / soy sauce coverage). Put the cubes in a frying pan over medium high heat and wait. Then wait some more. Tofu has a lot of what in it? Water. Lots. You have to cook ALL of it off. Once the water is gone and the tofu just starts to brown, start stirring it around. After it’s browned slightly, shake some Soy Sauce on top. About 1 Tbsp. (I say go easy with the soy sauce now becuase you can add more to the overall bowl but other people might not like as much as you.) Continue cooking for another few minutes until it browns up. The cookbook says remove the tofu, wipe the pan clean and put the tofu back in which I think is useless so I just keep on truckin’. Shake another Tbsp of soy sauce on the tofu and let it brown some more, maybe another few minutes. Then shut the heat off, grab a few pinches of Nutrional yeast and throw it on there. Mix it all around really good and then serve over brown rice. Top with cheese if you want ( I want.) And then omnomnomnomnom.

Listen, in the time it took for the water to FIRST cook out, I unloaded the dishwasher, fed the dog, packed my lunch for tomorrow, made some pudding,  and a few other random errands. It takes time!
